1 pint strawberries, quartered
1 avocado, diced
3/4 c cilantro, chopped
1 lime, juiced and zested
1/2 red onion, diced
Salt and pepper to taste
One of my favorite summer recipes. It's great eaten by itself or at a summer picnic. The sweetness of the strawberries is wonderful against the slight heat of the onion. It's a wonderful combination that doesn't require any cooking so you don't heat up the kitchen and is very easy to make so it can be done in a snap.
There are many ways this dish can be prepared to make it quite versatile all summer. If the berries were diced small and served with tortilla chips it can also be served like a salsa. The recipe can be doubled or tripled to make enough salsa for a party. If there are spicy food lovers attending, dice a jalapeno without the seeds and add to the salsa for more kick.
You could also make an Italian version of this salad by switching the cilantro out with chopped basil. Eliminate the lime juice and zest and marinate the strawberries in 1T balsamic vinegar for a few minutes. Balsamic vinegar and strawberries are wonderful together. The acid of vinegar and the sweet strawberries complement each other quite well. Swapping some slices of fresh mozzarella for the avocado would add to the Mediterranean feel. Both of these versions would be a hit at any summer party!
